Go Green Cucumber Dip

Cucumber DressingThis is a delicious dip for vegetables or as a topping for sliced tomatoes. Keep this handy in refrigerator for when you want to snack. The avocado makes this creamy and satisfying.

Makes 2 cups

Ingredients

  • 1 avocado, diced (firm)
  • 1 cucumber (seeded or use seedless), chopped
  • 1 medium to large lemon, juice and zest
  • 1 clove garlic, minced
  • ½ cup raw spinach
  • 1 green onion, chopped

Combine all ingredients and puree until smooth.  For a more interesting dip leave some of the chopped cucumbers out and then add back in once all other ingredients have been pureed.   Serve … (read more)
