This is a delicious dip for vegetables or as a topping for sliced tomatoes. Keep this handy in refrigerator for when you want to snack. The avocado makes this creamy and satisfying.
Makes 2 cups
- 1 avocado, diced (firm)
- 1 cucumber (seeded or use seedless), chopped
- 1 medium to large lemon, juice and zest
- 1 clove garlic, minced
- ½ cup raw spinach
- 1 green onion, chopped
